Chicken Panini Sandwich



Chicken Panini Sandwich:

Preparation Time :10 min
Cooking time : 10 min
Yield : No value

Ingredients :

French bread or any kind of Italian bread :4 slices
Left over chicken or grilled chicken : 1/2 cup cut into small pieces
Olives : 1 tblspn chopped
Jalapenos :1 tblspn chopped
Capsicum : 1 tblspn chopped
Tomato : 1 tblspn finely chopped
Onions : 1 tblspn finely chopped
Garlic : 1/2 tspn
Olive Oil : 1 tspn
Salt  : to taste
Shredded Cheese (any kind of cheese) : 1/2 cup

Directions:
First on the stove.Take a wide open pan add oil in it. When the oil is hot add crushed garlic and chopped onions,chopped olives,chopped jalapenos,tomatoes,capsicum, and give a good mix and add some salt in it.Now add chicken  pieces and mix very well.
Now plug it on the panini maker,while it is heat take bread put some shredded cheese and some curry stuff and top some more cheese and cover it with another bread. In the panini maker add little oil and put the stuffed bread and close it .
If you don't have panini maker don't worry about it ,take a pan add little oil and put on the stuffing bread and on top of the bread put any kind of weight like heavy weight glass bowl on it done .Now panini sandwich is ready to eat.Enjoy it.

Red Velvet Mini Cup Cakes



Red Velvet Mini Cup Cakes:
Preparation Time : 20 min
Cooking time : 15 min
Yield : 24 Cup Cakes

Ingredients:
All purpose flour/ Cake flour : 1 1/4 cups
Cocoa powder : 1 tbspn
Sugar : 2/3 cup
Eggs : 1 egg
Butter milk : 1/2 cup
Butter : 1/2 cup
Red food color : 1 tbspn
Baking soda : 1/2 tspn
Distilled white vinegar : 1/2 tspn
Vanilla essence :1/2 tspn
Salt : 1/2 tspn
Ready for icing
Directions : 

First preheat oven 350 degrees.Line standard muffin tins with paper liners .Mix together cake flour,cocoa,and salt.Take an electric mixer on medium-high speed,whisk together sugar and butter until combined.Add egg and beat until incorporated,scraping down sides of bowl as needed.Mix in food color and vanilla.
Add flour mixture in three batches,alternating with additions of buttermilk,and whisking well after each.stir together the baking soda and vinegar in a small bowl (it will foam),add mixture to the batter,and mix medium speed 10 seconds.
Pour batter evenly among lined  cups,filling each 3/4 full.Bake the cupcakes about 12 to 15 min or until tooth pick inserted in centers comes out clean.When cakes are done transfer the cakes to wire racks to cool completely.Cupcakes can be stored overnight at room temperature.
Decorate the cup cakes with chocolate whipping cream icing

Guacamole

Preparation Time :10 min
Cooking time : 10 min
Yield : 4
Ingredients :
Avocados - 2 ripened
Onion - 2 tablspn finely chopped
Tomato - 2 tblspn  seeds removed and finely chopped
Coriander leaves - 1 tablspn chopped
lemon juice - 1 tbspn
Salt -1/2 tspn
Directions:
First cut the avocados in half,remove seed,scoop the  avocado from the peel. Put in a mixing bowl.Using a spoon with mash the avocados.Don't do like mussy,It should be little chunky.Add salt and lime juice first,so, it will help delay the avocados turning brown.
Now add the chopped coriander leaves.Add chopped onion and chopped tomatoes just before serving.
Guacamole recipe is ready .Enjoy with chips,or use for sandwiches or salad.

Sakinalu


Sakinalu Recipe:

Preparation time : 5 hours
Cooking time : 30 min
Yield : 4

Ingredients:


Raw rice - 4 cups

Sesame seeds - 1 cup
Ajwain seeds - 2 tspn
Salt - to taste
Oil - for deep fry

Directions:
Wash the rice and soak it in water for about 3 hours.Drain the water after 3 hours and dry the rice on a cloth for about 1 hour.After that grind it as  fine powder.
Take a bi mixing bowl,add flour,sesame seeds,ajwain,salt and mix very well.Now add required amount of water and mix well.The dough should not be too watery or too thick.Put a big cotton cloth on the floor.Take small amount of dough and make round thin circles on a cloth.Let the dough dry and absorb the water in the round circles.Leave it for 1 hour .
Now take frying pan ,on the stove ,pour the oil for deep fry.When the oil is hot,take the circles with sharp edge plate and slowly put it in oil and fry it until crispy. Sakinalu is ready.Enjoy with tea time snack.

Jam Filled Butter Cookies


Jam Filled Butter Cookies Recipe :

Preparation Time :10 min
Cooking Time : 15 min
Yield - 1 Dozen

Ingredients :

Butter - 100 gms
All purpose Flour / Maida - 125 gms
Powdered sugar - 80 gms
Milk - 1 tspn
Vanilla Essence - 1/2 tspn
Strawberry Jam / any kind of jam -2 tblspn

Directions:
Preheat oven 350 degrees Fahrenheit.
Take a mixing bowl add butter and cream it,make sure the butter is room temperature.Now add powdered sugar and mix very well.
Add vanilla essence and mix .Add milk and mix. 
Then add all purpose flour give it to a good mix like soft dough.Now roll the dough gently and cut them into any design shape.I have star cookie cutter so, i make like star shape.
Next using your thumb to make print into the center of each cookie.Fill the thumb print with your favorite jam.And bake them at 350 F for 12 to 15 minutes.
When cookies are done remove from oven put it on cooling rack.Jam filled butter cookies  are ready to eat. I hope you will Enjoy.....

Egg with Milk Masala Curry


Egg with Milk Masala Recipe :

Preparation Time : 15 min
Cooking Time : 20 min
Yield : 4 people

Ingredients:

Boiled eggs -4
Onion - 1 large chopped
Tomato -1 large chopped
Green chillies -2 cut into slits
Garlic Cloves -5
Chilli powder -1/2 tspn
Turmeric Powder - 1/2 tspn
Coriander powder - 1 tspn
Garam masala Powder - 1/2 tspn
Curry leaves -5 leaves
Milk - 1 cup (any kind of milk.but  I used it 2%)
Salt to taste
Oil -2 tblspn
Coriander leaves for garnish.

Masala Paste:
cashews - 5
Poppy seeds - 1 tblspn
Coconut powder -1 tblspn
Sesame seeds -1 tblspn
Roast them all and make fine paste.

Directions:
Take a pan add little oil and fry the boiled eggs till it turns light golden color.Remove it and keep aside.In the same pan,add the remaining oil ,and add chopped onions saute them .Add garlic cloves and green chilli slits,and curry leaves saute for 2 min.
Now add tomatoes,chilli powder,turmeric powder, coriander powder,garam masala  and salt to taste and cook for 4 min.
Add the boiled eggs and milk let it cook 2 min.Now add the ground masala paste and cook for another 10 min.Garnish with coriander leaves.Egg with mil masala curry is ready to serve.Enjoy with roti/chapati or rice.



Palak Paneer Curry



Palak Paneer Recipe


Preparation Time: 15 min
Cooking Time : 20 min
Yield : 4 people

Ingredients:

Spinach/Palak - 1lbs
Paneer -150 gms
Onion -1 medium finely chopped
Tomato -2 small finely chopped
Cumin powder -1 tspn
Coriander powder -1 tspn
Chilli powder -1 tspn
Turmeric - 1/2 tspn
Salt - to taste
Butter -2 tblspn
Cream - 4 tblspn (optional)

Directions:
First remove stems,wash the spinach thoroughly in water.You will see the dirt settled at bottom.Blend the spinach like puree.
Take a sauce pan and add 2 tablspn butter ,when butter is melted add finely chopped onions.Fry the onions 2 min and add tomato,cook it 2 min and put the lid on.Then add turmeric powder,Chilli powder,coriander powder,cumin powder ,salt for taste and mix it very well.
Now add the blended spinach puree give a good mix and cook another 3 min or cook the spinach  till the raw smell goes off.
Now add the paneer and cook 1 min the off the stove.If you have cream then add it to the curry. Palak paneer curry is ready to eat.Enjoy with roti or rice.

Sorakaya Garelu


Sorakaya Garelu Recipe 
Preparation Time : 15 min
Cooking Time : 15 min
Yield : 4 people
Ingredients :
Sorakaya / Bottle guard - 2 cups
Rice flour - 2 cups
Sesame seeds- 2 tbl spoons
Coriander leaves -2 tbl spoons finely chopped
Curry leaves- 1 tbl spn chopped
Jeera -1 tspn
Green chillies- 2 finely chopped
Ginger -1 tspn finely chopped
Salt-to taste
Oil - for deep frying

Directions:
To make the recipe first peel the bottle guard and remove the seeds then grate very well.Take a bowl put grated sorakaya and rice flour.
Then add finely chopped green chillies,chopped coriander leaves,chopped curry leaves ,sesame seeds,jeera,ginger and salt to taste.Mix it very well.You can make a dough with those ingredients.Don't add any water.Make a dough like not too harder not to soft (Garela pindi).If you press it you can easy to make thin vada.
And now take a frying pan pour oil for deep frying.Let the oil heated medium.While the oil is heating take a zip lock cover or any kind of plastic cover put little oil to the cover and make small balls to the dough.And take a dough ball and press it  like vada put a hole in between and put it into the oil. Don't put vada in very hot oil.Garelu will burn easily.
Drop the vada now and fry them till it becomes golden brown color and remove it and put on a paper towel. So,the excess oil goes off.Now the garelu is ready to eat.Middle will be soft and edges are crispy and it looks great.Serve with any curry or without curry tastes wonderful.Enjoy the snacks !!
