Corn Vada (Mokkajonna garelu)

Corn vada (Garelu) Recipe
Preparation Time : 20 min
Cooking Time :30 min
Yield :4-5 people
Ingredients:
Corn kernels -3 cups (In the US you will find only sweet corns.so,I used sweet corn)
Corn flour - 2 cups (Add only if the corn kernel paste is watery)
Onion - 1 small chopped
Green chilli - 4
Garlic - 2 pods
Cumin seeds - 1 tblspn
Salt - to taste
Coriander leaves - 1/2 cup
Curry leaves - 10 leaves chopped
Amarnath leaves - 1 cup chopped
Directions:
First take a grinder and add the corn kernels,onion,green chillis,garlic pods,cumin seeds and salt.Grind them into a coarse paste.Then put it into a bowl.Don't add any water while grinding.Add corn flour If the vada batter is watery.Add chopped coriander leaves,chopped amarnath leaves,chopped curry leaves and mix it very well.Next take a zip lock cover or any kind of cover and take the vada batter and make into a vada on the cover.Put a hole in the middle of the vada. Heat the oil in a pan and slowly drop the vada into the oil.Fry them both sides on a medium high until it turns golden brown color. Remove the vada and put it on the paper towel.Done.Serve it with sabudana kheer (saggubiyyam payasam).It tastes really wonderful.Or eat with any non-veg curry.Enjoy!!

Make it into a coarse paste
Add all kind of leaves
Drop it into the oil and fry it.
Enjoy with sabudana kheer

Whole Fish fry

Whole Fish Fry Recipe
Preparation Time : 10 min
Cooking Time :20 min
Yield :4 people
Ingredients:
Fish -4 (I used mackerel fish)
For marinate masala
Chilli powder - 1 tspn
Turmeric powder -1 pinch
Salt - to taste
Coriander powder - 1 tspn
Cumin powder - 1/2 tspn
Coriander leaves - 1 tblspn crushed
Dill leaves - 1 tblspn crushed
Olive oil - 3 tbslpn
Lemon juice - 1 tblspn
Directions :
First take Whole Fish and wash them properly.Now cut the Fish into 2 to 3 slits.Take a small mixing bowl and add all the above ingredients (Marination) and mix very well.Add this mixture to the whole fish and cover it.Let the fish marinate for 2-3 hours.Next Heat the pan and put the whole fish in the pan and fry them about 4-5 minutes or until it turns brown color.Don't add any oil while frying.Fry the fish both side and garnish with coriander leaves.Enjoy!!

Three Layer Fruit Smoothie

3 Layer Fruit Smoothie Recipe
Preparation Time : 15 min

Yield :4 people
Ingredients:
For yellow smoothie
Mango(ripened) - 1 medium
Curd/yogurt - 1 cup
Honey - 1 tblspn
Ice cubes - 4 or 5
For green smoothie
Kiwi -2 peeled and chopped
Spinach - 1 tblspn
Curd - 1/2 cup
Mint leaves - 4 or 5 leaves
Honey - 1 tblspn
Ice cubes -4 or 5
For pink smoothie
Strawberries -4 chopped (don't remove the stems use it as it is)
Honey - 1 tblspn
Curd - 1/2 cup
Ice cubes - 4 or 5
Directions:
First wash the fruits and put it a side.Now peel the mango skin and chop it.Next take a blender and add yogurt,honey and mango pieces and blend it.Now add some ice cubes and blend it again. Next pour the mango smoothie into the glasses and put it a side.
Now wash the blender and add kiwi,spinach,yogurt,mint leaves and honey then,blend it again.add ice cubes and blend it again.Next pour the kiwi smoothie slowly with spoon on top of the mango smoothie. Wash the blender and add strawberry,yogurt,and honey then, blend it again.Next add some ice cubes and blend it then pour slowly with spoon on top of the kiwi smoothie glasses.Garnish with any fruit.Colorful smoothie is ready.Enjoy!!

First make 2 layers
Add a layer smoothie with spoon

Chicken Burgers

Chicken Burgers Recipe (Indian style)
Preparation Time : 10 min

Yield :20 patties
Ingredients:
Ground Chicken/Kheema - 1lb
Onion - 1 small chopped
Mint leaves -3 tblspn chopped
Coriander leaves -2 tblspn chopped
Black pepper powder - 1 tblspn
Salt - to taste
Italian bread grams/Plain bread grams - 1/2 cup
Ginger garlic paste - 1 tspn
Lemon juice - 1tspn
Olive oil - 3 tblspn
For Burger:
Small buns -1
Lettuce -1 leaf
Tomato slices -1
Onion slice - 1
Ketchup - 1tspn
Directions:
First take the ground chicken and put it into a big mixing bowl.Add finely chopped onions,mint leaves,coriander leaves,black pepper powder,salt,bread grams,ginger garlic paste,lemon juice and mix  very well and put it a side.Next heat the oil in a pan.Then make them into small patties and put it in the pan.Fry them both sides and put it on a paper towel.Done,Chicken patties are ready.You can store the burgers in the freezer up to 2 to 3 months. Make the chicken burger with small buns,lettuce,tomato slice and some ketchup.Enjoy!!

Ridge gourd with beans Curry

Ridge Gourd with Beans Curry Recipe
Preparation Time : 10 min
Cooking Time : 30 min
Yield :3-4 People
Ingredients:
Ridge gourd /Beerakaya - 300 gms Chopped
Black beans - 1 cup cooked
Black eye peas - 1/2 cup cooked
Onions - 1 small chopped
Green chillis - 4-5 chopped
Curry leaves - 4
Mustard seeds - 1 tspn
Cumin seeds - 1 tspn
Garlic - 4 pods crushed
Oil - 2 tblspn
Salt - to taste
Turmeric powder - 1/2 tspn
Coriander powder - 1/2 tspn
Coriander leaves - for garnish
Directions:
First heat the oil in a pan and add mustard seeds and cumin seeds.When they splutter add crushed garlic and fry it.Next add onions and green chillis then mix it.Add curry leaves,turmeric powder and salt then fry it.Add ridge gourd pieces and mix very well.Cook the ridge gourd pieces for about 10 minutes.Then add cooked black beans and black eye peas in it.Mix it well combined.Put the lid and cook for about 6 to 8 minutes.Add coriander powder and mix well then switch off the flame.Garnish with coriander leaves.Enjoy!!
Heat oil in pan add mustard,cumin seeds,
then add garlic
Add onions,curry leaves,green chillis
Add turmeric and ridge gourd pieces
Add beans and mix it
Cook for about 8 minutes and add
coriander powder

Tomato Soup

Tomato Soup with Bread 
Preparation Time : 10 min
Cooking Time : 35 min
Yield :3-4 People
Ingredients:
Tomatoes - 2 cans (each 28 oz)
Onion - 1 medium chopped
Garlic - 3 cloves
Olive oil - 2 tblspn
Sugar - 1tspn
Water or Vegetable Stock - 2 cup 
Cream cheese - 2 tblspn
Basil dried - 1 tspn
Oregano - 1/2 tspn
Salt - according to taste
Black pepper powder - 1 tspn or to taste
Butter - 1 tspn
Directions:
First heat the oil in a pan.Add garlic and saute for 30 seconds.Add onions and fry them until translucent.Add tomatoes and mix well.Next add water,sugar,salt,oregano,basil and black pepper powder and bring it to boil on medium high heat.When the tomatoes are cooked fully switch off the flame and wait until It cools completely.Then blend it like puree and pour it into the sauce pot and put it on the stove.Add cheese cream and mix well combined.Cook the soup until the cheese is melted.Add salt and pepper If you need it.Done,Serve with Italian or French bread(I used baguette bread).Enjoy!!
Note :If you like to add more cheese cream you can add it.It tastes even more better.
Add garlic and onions

Cook it until tomatoes are
fully cooked
Blend it
Pour it into the pot
Add cheese cream
Cook until cheese melted

Mutton Paya

Mutton Paya Recipe
Preparation Time : 30 min
Cooking Time : 45 min
Yield :3-4 People
Ingredients:
Mutton paya - 400 gms
Onion - 1 small chopped
Coconut powder -1 tblspn
Garam Masala Powder - 1tblspn
Water - 4 cups
Ginger garlic paste - 1 tblspn
Black pepper powder - 1tspn
Chilli powder - 2 -3 tblspn
Turmeric powder - 1 tspn
Salt - according to taste
Oil -2 tblspn
Coriander powder - 1 tspn
Coriander leaves - for garnish
Directions:
First wash the mutton pieces cleanly and put it a side.Now for masala paste take the onions,coconut powder and garam masala and make into a fine paste.Next take the pressure cooker and add mutton paya,chilli powder,salt and 1 tspn oil then mix it.Add 2 cups of water and put the lid on.Now cook the mutton on medium high until the cooker blows 5 whistles.Turn off the stove and wait until the pressure goes away.Next heat the oil in a big sauce pot and add ginger garlic paste and fry it.Add masala paste and add turmeric powder then fry it again.Now add cooked paya with water in it.Add another 2 cups of water ,salt and black pepper powder and cook it for about 20 minutes.Finally add coriander powder and switch off the flame.Garnish with coriander leaves.Serve with rice or any kind of bread.Enjoy!!
