Mooli Paratha


Radish(Mooli)Paratha Recipe
Preparation Time : 30 min
Cooking Time : 30 min
Yield :10 parathas

Ingredients:
Mooli/Radish - 2 small grated
Wheat flour -2 cups
Cumin powder - 1/2 tspn
Salt - to taste
Oil - 2 tspn
Butter - 2 tblspn
Oregano seeds/Ajwain -1/2 tspn
Red chilli powder - 1/2 tspn
Onion - 1 small finely chopped
Coriander leaves - chopped
Directions:
First take wheat flour and knead it into a soft dough like chapathi dough.Keep it a side for 30 minutes.Heat the oil in a pan and add onions and saute it.Add grated radish and saute it for about 5 min.Add cumin powder,salt,chilli powder,ajwain and coriander leaves and mix very well.Switch of the flame and let it cool completely.Next take chapathi dough and make them into a medium size balls.Take the radish stuffing and make balls of size smaller than chapathi balls.Roll chapathi balls to the size of poori.Place the stuffing and close it tightly.Repeat the process for all the chapathi balls.Dust the rolling board with dry flour.Rolle stuffed paratha ball into a paratha turning it so,that it does-not stick to the rolling board.If need add dust to the paratha with more dry flour.Heat the pan and apply it with little oil and place the stuffed chapathi and cook it until the brown spots appear.Cook both sides and apply with butter.Make the all parathas.Done!! Enjoy Mooli paratha with curd and any pickle.

Paneer Butter Masala

Paneer Butter Masala Recipe
Preparation Time : 20 min
Cooking Time : 40 min
Yield :4-5 people
Ingredients:
Paneer -7 oz or 200 gms
Onion - 2 medium size chopped
Tomato - 3 medium size chopped
Ginger garlic paste - 1 tblspn
Butter - 2 tblspn
Coriander powder - 1 tspn
Cumin powder -1 tspn
Bay leaf -1
Cardamom -4
Cloves - 3
Cinnamon stick -1 
Oil - 1 tblspn
Green chillis - 3 chopped
Kasuri methi -1 tblspn
Water - as needed
Salt - to taste
Chilli powder - 1/2 tspn
Color -optional
Cream - optional
Directions:
First heat the oil in a pan and add bay leaf,cloves,cinnamon stick and cardamom in it.Next add ginger garlic paste,green chillis and onions.Fry them for about 1 min.Add tomatoes and mix it very well.Cook them for about 2 min.and switch off the flame.Let it cool completely.Meanwhile cut the paneer into cubes and fry them in a frying pan until it turns light brown color and put a side.Next take the cooled masala and grind them into a fine paste.Take a big frying pan and add butter in it.Add the masala paste into the pan and cook it for a while. Add some water if the consistency is very thick.Add coriander powder,chilli powder,cumin powder and salt.Mix it very well and add fried paneer pieces.Cook them for about 3 to 4 min.
Add color if you need.Done.Add kasuri methi and switch off the flame.Garnish with cream.Enjoy with chapathi or jeera rice.

Marble Cake

                        3 layer marble cake Recipe
Preparation Time : 30 min
Cooking Time : 50-60 min
Yield :6-8 people
Ingredients:
Butter -1/2 cup Room temperature
All purpose flour/Maida -2 cups
Baking powder - 2 tspn
Sugar -1 cup
Eggs -4
Vanilla essence -2 tspn
Butter milk - 2/3 cup
Cocoa Powder -1/4 cup
Strawberries -4 Blend it into a fine paste
For chocolate frosting
Semi sweet chocolate chips - 3/4 cup
Butter -1 tspn
Directions:
First preheat the oven 350 degrees Fahrenheit.Apply butter to the pan and put it a side.Take a bowl and mix all purpose flour and baking powder and put a side.Take a big mixing bowl and add butter and sugar.Next beat this mixture with electric mixer until it is fluffy and soft.Add one egg at a time and continuously beat after each addition.Add vanilla essence and beat again.Next add butter milk and beat with electric mixer.Then,add flour and mix well until flour is incorporated. Separate the batter into 3 batches.Take a bowl and cocoa powder and warm water and mix with the spoon until smooth.Add the one batch of batter and mix very well. Chocolate batter is ready.Take another batch and add blended strawberries paste and mix very well.All three colors (Vanilla,chocolate,pink)batter is now ready.Spoon batters into the prepared pan in 3 layers.To creating marbling effect,run a fork through the batters in a swirling motion.Bake the cake for about 50 to 60 minutes or until inserted toothpick comes out clean. Transfer the cake pan to a cool rack for about 1 to 2 hours.Done.
For chocolate frosting melt the chocolate and butter in the microwave for about 1 minute.Mix in between so,It wont over heat.Done.Decorate with Chocolate frosting or your favorite frosting.Enjoy!!

Bagara Baingan

Bagara Baingan Recipe
Preparation Time : 20 min
Cooking Time : 30 min
Yield :4 people
Ingredients:
Small Brinjals -15 count slit them lengthwise
Sesame seeds -1/2 cup
Peanuts -1/2 cup
Dried coconut powder -3tblspn
Ginger garlic paste -1tblspn
Green chillis - 4 -5 slits
Chilli powder - 1/2 tspn
Turmeric powder - 1/2 tspn
Tamarind -big lemon size
Coriander powder - 1 tblspn
Oil - 2 tblspn
Salt - to taste
Directions:
First dry roast the peanuts and sesame seeds separately.When they  cool down grind together with coconut powder and make it into a fine paste.Next heat the oil in a pan and add green chillis and ginger garlic paste.Then,add the brinjals into the pan and fry them for about 2-3 minutes.When the brinjals are half cooked add the peanut ground paste and mix it very well.Add tamarind juice and cook it for about 15-20 minutes or until the sauce thickens.Add salt,chilli powder,coriander powder and turmeric powder while cooking.Done.Garnish with coriander leaves.Enjoy with Biryani or jeera rice.

Mushroom Biryani

Mushroom Biryani Recipe
Preparation Time : 15 min
Cooking Time : 45 min
Yield :4 people
Ingredients:
Basmati rice - 3 cups
Mushroom -24 oz pack
Onion - 1 medium chopped
Tomatoes - 3 medium chopped
Green chillis - 4 chopped
Ginger garlic paste - 1 tblspn
Bay leaf - 1
Star anise - 1
Maratha moggu -1
Jeera - 1 tspn
Dagad phool - 1tblspn
Cinnamon stick -1
Oil/butter - 2 tblspn
Water - 5 cups
Salt - to taste
Fried onions - for garnish
Directions:
First wash the rice and put it a side.Heat the pan and add butter/oil.Add bay leaf,star anise,maratha moggu,jeera,dagad phool and cinnamon stick.Next add green chiilis and onions in it.When the onions are fried add ginger garlic paste and fry it again.Add mushrooms and mix it very well.Then add chopped tomatoes and cook it for about 2 minutes.Now add rice and salt then, fry it for about 1 minute.Add water and cook the rice for about 5 minutes.Then put the lid and cook it on medium low heat until rice is completely done.Garnish with fried onions and coriander leaves.Enjoy!!
