Broccoli with Potato Curry

Broccoli with Potato Curry Recipe
Preparation Time : 20 min
Cooking Time : 30 min
Yield :3-4 People
Ingredients:
Broccoli  – 3 cups
Potatoes – 3 medium
Tomatoes – 2 medium
Onions – 2 medium 
Garlic crushed - 1tspn
Green chillies – 4 slit lengthwise
Turmeric powder – 1/2 tsp.
Red Chilli powder – 1tsp.
Coriander powder – 1tsp
Oil – 2 tbsp.
Cumin Seeds – 1 tspn.
Mustard seeds -1 tspn
Curry leaves -4
Coriander leaves - for garnish
Salt - to taste
Direction :
Wash and peel the potatoes and cut them it into cubes.Chop the onion and tomato and keep a side.Cut the broccoli into small florets,wash and blanch them by putting them in boiling water and letting them remain in the water for a few minutes,then drain the water completely.Heat oil in a pan and add mustard seeds,cumin seeds.Once the splutter,add crushed garlic,chopped onions and green chillis. Add turmeric powder,chilli powder,curry leaves and chopped tomatoes and cook until they are fully cooked.Then add chopped potato pieces and put the lid.Cook them for about 5 min. and add broccoli florets.Add salt and mix very well. Cook them for about 10 min. and add some coriander powder and mix it.Done. Garnish with coriander leaves.Enjoy with rice or roti.

Mushrooms stuffed with fish

Preparation Time : 10 min
Cooking Time :20 min
Yield :4 people
Ingredients
Mushrooms - 18 or 1 and half lbs
Fish pieces - 100 gms
Onion - 1 small chopped
Cream cheese - 8 oz  at Room temperature
Chiili sauce or hot sauce - 1 tblspn
Black pepper - 1 tspn
Salt - To taste
Butter - 1 tblspn
Monterey jack cheese - 3/4 cup grated
Bread grams - for garnish
Directions:
First clean the mushrooms and remove the stems.Don't throw the mushroom stems away,chop them finely and put them a side.Heat butter in a pan and add chopped onions and chopped mushroom stems.Fry them for about 5 -6 min.
Heat oil in a pan and add fish and cook it for about 5 minutes and add salt and pepper.Then, add  onions and mix it well. Add chilli sauce and cream cheese and give it a good mix.Mash the cooked fish with spoon.It should be like a dip.Add salt if you need more. Stuff the mushrooms with the cheese and fish dip and put it in the baking tray.Finally take the shredded cheese and put it on top of each stuffed mushroom and sprinkle with bread grams.Now spray it with some olive oil and bake them at 400 degrees Fahrenheit for about 12 to 15 min.Enjoy!!  
Note:For the mushrooms I used portabella mushrooms.You can use any kind of mushrooms.You can prepare this with shrimp or crab too.For shredded cheese I used montery jack cheese but,you can use any kind of cheese.For vegetarians skip fish and use the paneer but,the process is same.Don't over cook the stuffed mushroom.It will take time process,but it is worth it.









Apollo Fish Fry

Preparation Time : 10 min
Cooking Time :20 min
Yield :4 people
Ingredients
Fish Fillets - 1lb (boneless and skin less) 
Green chillis -3 chopped
Ginger garlic paste - 1 tspn
Egg - 1
All purpose flour- 1 tblspn
Corn flour -2 tblspn
Curd -1 tspn
Soy sauce - 1 tspn
Turmeric powder
chilli flakes - 1tspn
Chilli powder - 1 tspn
Coriander powder - 1 tspn
Salt - to taste
Oil -for deep fry
Lemon juice - 1tspn
Directions:
Take bowl add fish pieces and wash with vinegar and water then add salt, ginger garlic paste, chilly powder, turmeric powder, mix it well, add egg, corn starch, all purpose flour,mix this well and deep fry them, keep it aside.Heat oil in a pan add ginger garlic paste, green chilies, curry leaves, coriander powder,salt, soy sauce, curd, chilli flakes, chopped coriander leaves,cook this some time and add fried fish toss it and add lime juice.Enjoy!!
Note:I used tilapia fillets.You can use any kind of fish.Recipe is adapted from Vahrehvah.com.

Milk Fish Curry

Milk Fish Curry Recipe
Preparation Time : 20 min
Cooking Time : 35 min
Yield :3-4 People
Ingredients:
Fresh Milk fish pieces -2 lbs
Onions -2 medium chopped
Tamarind - 1 big lemon size
Turmeric powder - 1/2 tspn size
Chilli powder - 1 tblspn or to taste
Cumin seeds - 1 tblspn
Methi seeds - 1 tspn
Coriander and cumin powder - 1 tspn
Ginger garlic paste - 1 tspn
Salt - to taste
Oil -3 tblspn
Cilantro - for garnish
Directions:
First wash the fish pieces thoroughly.Add some salt and put it a side.Heat 1 tspn oil and fry cumin and methi seeds. Add chopped onion and fry them. switch off the flame and keep a side.When it is completely cool grind them into a fine paste. Heat oil in a pan and add ginger garlic paste and onion paste and fry it. Add turmeric and chilli powder and fish pieces in it.Add tamarind juice,salt and bring it to boil.Add water if you need.Add coriander and cumin powder and cook for until the soup thickens. Garnish with coriander leaves. If the fish pulusu is completely cool it tastes great.Enjoy with Jowar roti (jonna rotte) or rice.











Carrot Fry

Preparation Time : 10 min
Cooking Time :20 min
Yield :4 people
Ingredients
Carrots-4 
Onion - 1 chopped
Chilli powder -1 tspn or to taste
Salt - to taste
Oil - 3 tblspn
Mustard Seeds - 1/4 tsp
Curry leaves -4
Coriander powder- 1/2 tspn
Cilantro - To garnish
Directions:
Peel the carrots skin and chop them into small pieces.
Add oil into a pan and when it is hot add Mustard Seeds,and curry leaves and turmeric powder.
Add Onions and wait till onion turns golden brown. 
To this add chopped carrots.Close the lid until carrots are almost cooked, add salt,chilli powder and coriander powder.
Close with lid for about a min and then remove from stove top. Garnish with cilantro. 
Serve with rice and sambar  or eat with roti. Enjoy!
