Ridge Gourd with Beans Curry Recipe

Yield :3-4 People
Ingredients:
Ridge gourd /Beerakaya - 300 gms Chopped
Black beans - 1 cup cooked
Black eye peas - 1/2 cup cooked
Onions - 1 small chopped
Green chillis - 4-5 chopped
Curry leaves - 4
Mustard seeds - 1 tspn
Cumin seeds - 1 tspn
Garlic - 4 pods crushed
Oil - 2 tblspn
Salt - to taste
Turmeric powder - 1/2 tspn
Coriander powder - 1/2 tspn
Coriander leaves - for garnish
Directions:
First heat the oil in a pan and add mustard seeds and cumin seeds.When they splutter add crushed garlic and fry it.Next add onions and green chillis then mix it.Add curry leaves,turmeric powder and salt then fry it.Add ridge gourd pieces and mix very well.Cook the ridge gourd pieces for about 10 minutes.Then add cooked black beans and black eye peas in it.Mix it well combined.Put the lid and cook for about 6 to 8 minutes.Add coriander powder and mix well then switch off the flame.Garnish with coriander leaves.Enjoy!!
