Dondakaya Fry /Tindora fry

Preparation Time : 15 min
Cooking Time :20 min
Yield :4 
Ingredients:
Dondakaya - 250 gms
Green chillis - 3 chopped
Small onion - chopped
Sesame seeds  -1 tblspn
Coconut powder - 1 tblspn
Oil -2 tblspn
Mustard seeds - 1 tspn
Cumin seeds - 1 tspn
Ginger garlic paste - 1tspn
Salt - to taste
Curry leaves - 4 
Turmeric powder - 1/2 tspn
Chilli powder -1/2 tspn
Coriander leaves - 1 tblspn
Directions:
First wash the dondakaya and cut it into 6-8 pieces lengthwise.Heat oil in a pan.Add mustard and cumin seeds and allow them to splutter.Next add turmeric, green chillis,onions and curry leaves.Add ginger garlic paste and mix well.Add dondakaya pieces and put the lid. Cook them on a slow flame and keep stirring in between.Meanwhile roast the sesame seeds and grind with coconut powder. Now remove the lid ,add salt,chilli powder and sesame seeds powder and mix very well.Switch off the flame and garnish with coriander leaves.Serve with hot rice or roti.Enjoy!!

Urad Dal Vada / Minapa Garelu

Medu Vada (Minapa Pappu Garelu) Recipe
Preparation Time : 30 min
Cooking Time :30 min
Yield :15-18
Ingredients:
Minapa pappu /urad dal - 1 cup
Green chillis -3
Small onion - finely chopped
Ginger -small piece
Curry leaves - 5 chopped
Coriander leaves -1 tblspn (optional)
Salt - to taste
Oil - For deep fry
Directions:
First soak the urad dal in water for atleast 3-4 hours.After that 
Drain out all the water with the strainer.
Add the green chillis,ginger piece and salt to the urad dal.Grind the dal in the mixie grinder and make into a fine paste.Add very little water if you need.Add the chopped onions,curry leaves and coriander leaves and mix it very well.
Now the little amount of vada mixture on the zip lock cover or any kind fresh cover and shape it into a vada.
Heat oil in a pan.When the oil is hot,slowly drop the vada in the oil.Fry the vadas both sides until it turns golden color.
Remove from the oil and put it on paper towel.Serve hot with sambar or chutney.Enjoy!!

Pala Undralla Payasam (Undralla Payasam)

Preparation Time : 20 min

Ingredients:
Rice flour - 1 cup
Water -2 cups
Milk -2 cups
Sugar -3/4 cup
Cardamom powder - 1/4 tspn
Salt - a pinch
Ghee /Butter - 1tblspn
Directions:
First take a pan and add half cup of milk,1 tspn ghee and mix well.Add the rice flour and salt.Put the stove on medium high with continuous stirring.Once it forms a soft dough then switch off the flame.When the dough is cool add little ghee and knead the dough.Now make the balls with the dough and put a side.Next take a big pot and add water.Add leftover milk and allow to boil.When the milk is boiling,drop the balls gently.Mix once in a while to avoid stick to the pot.Cook the balls for about 8-10 min.Check the thicker consistency.Once the balls are cooked add sugar and cardamom powder.Mix well and cook for about 1 min.and switch off the flame.When the consistency is very thick add little more milk.Garnish with Nuts or saffron.Serve hot.Enjoy!!

Mixed Vegetable Sambar

Preparation Time : 15 min
Cooking Time :30 min

Ingredients:
Toor dal -1 cup
Water - 2 cups
Vegetables -4 cups-chopped (Bottle gourd,Carrots,Lady finger,egg plant. Add any vegetable if you like)
Tamarind Pulp -2 tblspn
Tomatoes -2 chopped
Medium Onion -1/2 chopped
Green chillis - 4 to 5
Red chillis -3 to 4
Curry leaves -5 to 6
Salt - to taste
Oil -2 tblspn
Turmeric powder - 1tspn
Mustard seeds - 1 tspn
Cumin seeds -1 tspn
Sambar powder -1 tblspn
Biryani leaf -2
Directions:
First wash and cook the dal in the pressure cooker until 3 whistles.Once pressure is done, mash the dal with a spoon.Heat the oil in a big sauce pot.When the oil is hot add mustard seeds and cumin seeds.When they splutter add green chillis,red chillis,onions and turmeric powder.Add vegetables and mix it very well.Add tomatoes and cook them for about 4 to 5 min.When the vegetables are half cooked add tamarind pulp with 5 cups of water.Boil it for 5 to 6 min.Now add mashed dal and add some water if required.Add salt,curry leaves,Biryani leaf and sambar powder.Boil it for 10 to 15 min. or until sambar thickens.Adjust the consistency according to your taste.Done!! Enjoy with Hot rice,Idli or Dosa.

Cook Dal in cooker

Add cooked dal  and boil again

Spicy Puffed Rice Mixture

                                            Maramaralu Mixture

Ingredients:
Puffed rice -200gms
Green chillis -6 chopped
Curry leaves -4to5
Red chillis -4to5
Garlic pods -3
Oil -2 tblspn
Mustard seeds -1 tspn
Cumin seeds -1 tspn
Turmeric powder -1/2 tspn
Fried peanuts -2 cups (Recipe here)
Sev -4 cups (Recipe here)
Kara boondi -3 cups (Recipe here)
Salt -as needed
Directions:
First heat the oil in a pan.When the oil is hot add mustard seeds and cumin seeds.Add crushed garlic,add turmeric powder,chopped green chillis,red chillis and curry leaves.Add salt and fry them until chillis are fully fried.Next add puffed rice and mix very well.Fry them for about 5 to 8 min.or until crispy.Add fried peanuts and broken sev,plain boondi and mix very well.Enjoy with teatime snack.

Kara Sev
Preparation Time : 10 min
Cooking Time : 20 min

Ingredients:
Besan/Gram flour -1 cup
Rice flour -1 tblspn
Salt -to taste
Turmeric -pinch
Hing/inguva powder - pinch
Hot oil/hot butter -1/4 cup
Water - as needed
Oil - for deep fry
Directions:
First take a mixing bowl add besan,rice flour,salt,hing and turmeric powder.Next add hot oil and mix it very well.Add enough water and knead it into a soft dough.Take the murukku press and put some dough in it.Meanwhile heat the oil in a pan.When the oil is hot squeeze out the dough with the murukku press and fry them.Fry the sev both sides until it turns golden color.Remove on to paper towel.Continue with the rest of the dough.When it is completely cooled down,break into a pieces and store into a airtight container.Enjoy!!
