Vangi Bath

Brinjal Rice (Vangi Bath)Recipe
Preparation Time : 10 min
Cooking Time : 10 min
Yield :3-4 People
Ingredients:
Cooked rice - 4 cups
Brinjal (Vankaya) long - 2
Vangi bath powder - 2 tblspn
Curry leaves - 4 to 5
Green chillis - 4 chopped
Peanuts - 2 tblspn
Turmeric powder - 1/2 tspn
Salt -according to taste
Oil/Ghee - 2 tblspn
Mustard seeds - 1 tspn
Cumin seeds - 1 tspn
Garlic - 1 tblspn crushed
Directions:
First cut the brinjal into bite size pieces and put it into the salt water.Now heat oil in a big pan and add mustard and cumin seeds,when they splutter add garlic and fry it.Next add green chillis,peanuts and curry leaves in it.When they are fried add turmeric powder and brinjal pieces.Mix it well combined.Add salt and cook it for about 2 minutes.Don't over cook the brinjal,It should be half cooked only.Next add the vangibath masala powder and mix it.Then add cooked rice and mix it gently.Taste the rice and If you need any salt you can add it now.Enjoy!!
Cut the brinjal into cubes and put it
into the water
Heat oil in a pan add mustard and
cumin seeds then add garlic and peanuts
Add green chillis and curry leaves
Add turmeric powder and
brinjal pieces
Add some salt
Add vangibath masala powder
Add rice 
Check the salt and mix it.
Done.

Vangi Bath Masala Powder

Brinjal Rice Masala for Vangi bath
Preparation Time : 10 min
Cooking Time : 5 min
Yield :No value
Ingredients:
Chana dal - 2 tblspn
Urad Dal - 2 tblspn
Coconut powder - 1 tblspn
Coriander seeds - 1tblspn
Dry red chillis - 4
Cumin seeds - 1 tspn 
Garlic pods - 2
Tamarind - 3 pieces or little amount
Garam Masala Powder - 1/2 tspn
Salt - According to taste
Directions:
First heat the pan and fry the spices one bye one without oil,and put it a side.Now add garam masala powder and salt in it.Next grind the spices into a course powder.This powder should be not be too coarse and not too much like fine powder.Make sure it is slightly course powder.Easy home made masala powder is ready.You can use for brinjal rice or squash rice.It tastes wonderful.
Take all ingredients
Fry them one by one
Fried completely
Add garam masala powder
Grind it as slightly course powder

Chilli Baby Corn Gravy

Chilli Baby Corn Gravy style
Preparation Time : 20 min
Cooking Time : 15 min
Yield :3-4 People
Ingredients:
Baby corn - 2 cans (15 oz per can)
Corn flour - 4 tblspn
Maida /All purpose flour - 2 tblspn
Water - 1 cup
Ginger garlic - 2 tspn Chopped
Green chillis - 4 to 5
Capsicum - 1 medium (chop into cubes)
Onions - 1 small chopped
Black pepper powder - 1/2 tspn
Salt - according to taste
Soy sauce - 1 tblspn
Chilli sauce - 1 tspn
Tomato ketchup - 1tblspn
Oil - for deep fry
Coriander leaves - for garnish
Color - optional
Directions :
First wash the baby corn and cut them into bite size pieces.Take a mixing bowl and add corn flour,maida,black pepper and salt in it.Now make the batter with 1 cup of water  and add the corn into the batter.Next heat the oil in a pan and deep fry the baby corn on medium high.Remove the baby corn and put it on a paper towel.If you have any left over batter,don't throw it away,put it a side.Then heat the wok and add little bit of oil in it.When the oil is hot add ginger garlic and fry it.Then,add green chillis and fry it again.Now add onions and capsicum and fry it for about 2 minutes.Next add all the sauces one by one and mix it well.Then, add 2 tspn corn flour batter and 3 tblspn water  and cook it for about 1 minute and add the baby corn and mix it very well.Add salt if you need it.Baby corn chilli gravy is ready.Garnish with coriander leaves.Enjoy with white rice.
Wash and chop the corn
Make the batter with corn flour,maida,
pepper and salt.
Add  the baby corn into the batter
Heat oil in a pan
Deep fry the baby corn
Put it into a paper towel
Heat the wok and add oil ,ginger garlic
and green chillis

Add onions and capsicum then fry it.
Add all the sauces and mix it.
Add corn flour batter and water  in it.
Mix the fried baby corn and
mix well
Garnish with coriander leaves and
eat with rice

Spinach Rice

Spinach Rice Recipe
Preparation Time : 10 min
Cooking Time : 15 min
Yield :3-4 People
Ingredients:
Cooked Rice - 4 cups
Spinach - 2 cups
Green chillis -6 
Peanuts - 1 tblspn
Cashews - 1 tblspn
Ghee/Butter/Oil - 2 tblspn
Salt - according to taste
Mustard seeds - 1tspn
Cumin seeds - 1tspn
Garlic - 1 tblspn crushed
Green chillis - 5 -6 (Don't chop it)
Curry leaves - 4 to 5
Directions:
First wash the spinach in the water and drain it.Next,take a pan and fry the spinach for about 2 minutes.Let it cool the spinach completely.Then,grind it as a fine paste.Now heat butter in a pan and  add mustard seeds and cumin seeds.When they are spluttered add crushed garlic then,add curry leaves in it.Now add spinach paste and fry it until oil oozes out.Meanwhile fry the peanuts,cashews and green chillis in a pan with a little oil and put it a side.When the spinach is cooked completely add cooked rice and salt in it.Mix it well.Put the lid and cook it on medium low for about 2 minutes and switch off the flame.Now add cashews,peanuts and green chillis then mix it.Done!Easy spinach rice is ready.Enjoy!!
Note:I added nuts and chillis at the last part because,I like crunchiness of the nuts and for the  chillis I didn't want the rice to be too spicy.If you like you can add after garlic.

Clean the spinach put in a pan
Fry it for about 2 minutes
Grind it
Heat butter in a pan and add mustard
cumin seeds and garlic in it.
Fry the curry leaves and spinach paste
Add rice and salt
Mix it very well
Fry the peanuts,cashews and green
chillis in a pan and add it to the rice
Done!

Mint (Pudina) Chicken Fry

Mint Chicken Fry Recipe
Preparation Time : 10 min
Cooking Time : 30 min
Yield :3-4 People
Ingredients:
Chicken - 1lb
Mint leaves - 1 cup
Onions- 1 small chopped
Ginger garlic paste - 1 tspn
Garam masala powder - 1 tspn
Red chilli powder - 1 tblspn
Turmeric powder - 1/2 tspn
Salt - according to taste
Oil - 2 tblspn
Coriander powder - 1tspn
Coriander leaves - for garnish
Directions:
First, clean the chicken and put it a side.Grind the mint leaves and onions and make it into a course paste.Next, heat the oil in a pan on medium high.Add the mint onion paste and then fry it for about two minutes. Add turmeric powder,chilli powder and garam masala and fry it , then add ginger garlic paste and fry it again.Now add the chicken and give it a good mix.Add salt to the chicken and mix it well.Put the lid on.(you don't need to add any water because the water will come out of the chicken) Now cook it on medium low for about 15-20 min or until all the water is evaporated.Add coriander powder and mix it then switch off the flame.Mint Chicken is ready.Enjoy with rice or roti. Garnish with coriander leaves.Enjoy!!
Note: If you can use thigh meat then it tastes more better.
Clean the chicken
Wash the mint leaves
Grind the onions and mint leaves

Heat oil in a pan and add mint
and onion paste
Add all spice and fry them about for
 3 minutes
Add the chicken
Add salt and give it a good mix
Put the lid and cook
Mix in between
Add some coriander powder and
switch off the flame
