Khova / Mawa in a microwave

Preparation Time : 5 min
Cooking Time :5 min
Yield :4 people
Ingredients:
Sweetened condensed milk - 14 oz can
Ghee -1 tspn
Curd / yogurt -2 tspn
Directions:
 Mix all the ingredients together in a microwave safe bowl.Put it in the microwave for 3min.Remove from microwave and mix it then put it again for about 2 min.It will look like bubble up.
Mix it and put it again for another  2min.Remove from microwave and mix it.It's like crumbly. Easy khoya is ready.
It tastes great.You can use it in any kind of sweets.
Note:My Microwave is 750 watts.

Pala Thalikalu / Thalikala Payasam


Happy Vinayaka Chavithi...May lord Ganapathi bring happiness and peace to all.This sweet is a must have on Vinayaka Chavithi.This is a rich sweet made of  hand made noodles  and sugar.


Preparation Time : 30 min
Cooking Time :40 min
Yield :4-6 people
Ingredients:
Wheat flour-3/4 cup 
Rice flour - 4 tsp
Ghee - 1/2 tbsp
Milk-2 cups
Sugar/jaggery - 2 cups
Cardomam powder- 1/2 tsp
Water -4 cups
Dry fruits -for garnish
Directions:
First take wheat flour and make into a chapathi dough and put aside.Take rice flour and make into a batter.
Now take the dough little by little and roll the dough on your fingers to form noodle shape.Make the noodles out of all the dough.
Next take 4 cups of water in a saucepan and bring them to a boil.Add ghee in the boiling water and add the hand made noodles and boil them for 15 min.Add sugar and boil it for about 3 min. Wait until sugar is dissolved.
Add rice flour batter and mix it slowly,while you are mixing the sauce will be thickened. When the sauce thickened add cardamom powder and hot milk. Cook for another 3 min.
Now switch off the flame.if you want you can add dry fruits. Enjoy!!

Sweet Pongal /Paramannam

Preparation Time : 10 min
Cooking Time :20-30 min
Yield :4 people
Ingredients:
Rice – 1 cup
Moong dal -1 cup
jaggery – 2 cups grated
Ghee – 2 tblspn
Dry fruits -few
Water – 4 cups
Milk -half cup
Cardamom powder -half tspn  
Directions: 
First wash the rice and moong dal. Now take a pressure cooker and add 4 cups of water ,now add the rice and moong dal and close the cooker. Cook till you get 3 whistles.
let it cool down, then open the lid and put on low flame and add 2 cups of grated jaggery and cook till it melts.
Now add milk,cardomam powder and ghee.Mix it very well and cook for about 3 min.Lastly add the fried dry fruits in ghee and switch off the flame. Enjoy!! 

Green Mango Halwa

Preparation Time : 10 min
Cooking Time :20-30 min
Yield :10-15 pieces
Ingredients:
Green Mango - shredded 1 cup
Sugar -1.5 cup
Milk - 1 cup
Ghee - 1 tblspn
Food color -optional
Dry fruits - for garnish
Directions:
Heat ghee in a pan and fry the shredded green mango for about 5 min.

Add milk and cook until the milk is fully evaporated.Keep stirring in between.

Add color and sugar.Then cook it on medium low.

After a while the mixture become loosen, keep stirring the halwa until it thickened.

Pour the mixture on to a greased tray with ghee and rest for 2 to3 hours.

Cut the mango halwa into pieces.Sweet and tangy halwa is ready.Garnish with nuts.

Pala Undralla Payasam (Undralla Payasam)

Preparation Time : 20 min
Cooking Time :20 min
Yield : No Value
Ingredients:
Rice flour - 1 cup
Water -2 cups
Milk -2 cups
Sugar -3/4 cup
Cardamom powder - 1/4 tspn
Salt - a pinch
Ghee /Butter - 1tblspn
Directions:
First take a pan and add half cup of milk,1 tspn ghee and mix well.Add the rice flour and salt.Put the stove on medium high with continuous stirring.Once it forms a soft dough then switch off the flame.When the dough is cool add little ghee and knead the dough.Now make the balls with the dough and put a side.Next take a big pot and add water.Add leftover milk and allow to boil.When the milk is boiling,drop the balls gently.Mix once in a while to avoid stick to the pot.Cook the balls for about 8-10 min.Check the thicker consistency.Once the balls are cooked add sugar and cardamom powder.Mix well and cook for about 1 min.and switch off the flame.When the consistency is very thick add little more milk.Garnish with Nuts or saffron.Serve hot.Enjoy!!

Ras Malai with Ricotta Cheese

Easy Ras Malai Recipe
Preparation Time : 15 min.
Cooking Time : 45 min.
Yield :4 people
Ingredients:
For malai:
Ricotta cheese - 425 gms
Sugar - 3 tblspn
For rasam :
Evaporated milk - 350 gms
Sugar - 4 tblspn
Cardamom powder - 1/2 tspn
Almond slices - for garnish 
Directions -
First preheat the oven for about 350 degrees Fahrenheit. Next take a bowl and mix ricotta cheese and sugar.Then take a muffin pan and apply some oil in it.Now take ricotta cheese and put it into the muffin pan like the picture below.Bake them for about 30-35 minutes.When it is done remove it from oven and cool it completely.Mean while take the sauce pot and add evaporated milk and cook it for about 3-4 min.Then add sugar and cardamom powder and switch off the flame.Now wait 'til the milk cooled completely.Then add baked malai into the cool milk and put it into the refrigerator for about 3 to 4 hours.Now garnish it with almonds slices.Enjoy!!
Note:I have used only almond slices because I don't have pistachios.If you have it you can use it.I don't have saffron so,I didn't use it.If you have it you use it.

Moong Dal Stuffed Sweet Chapathi (Bobbatlu)


                  Burelu or Polelu or Bhakshalu 
Preparation Time : 30 min.
Cooking Time : 20 min.
Yield : 20 sweet chapathis
Ingredients:
Moong Dal - 1 cup
Water - 1 cup
Cardamom powder - 1/2 tspn
For the dough: 
All purpose flour/Maida - 1 and half cup
Water - enough to make soft dough
Oil/Ghee - enough to cook the chapathi
Directions :
First, Make a soft dough with all purpose flour and water.Put it a side for rest about 1 hour.Wash the moong dal and add water and cook it until well cooked.Put it a side and cool it completely.
Now,grind the dal with sugar till it becomes paste.Don't add any water.Next, heat the pan and add moong dal paste and cook it until it becomes thick paste.If you like cardamom powder you can add it too.Mix the paste in between.Remove the pan and cool it completely.
Then,take the moong dal paste and make into a round balls.Now,take the lemon size amount of dough and spread like little poori and place the moong dal ball in the center and close it with the dough.
Now,apply little oil on a cover and place the dough covered with moong dal ball and press with your hands gently. Make it like a little chapathi.
Next,Heat 1 tspn oil in a pan and cook the sweet chapathi on medium low heat.Enjoy with Ghee!!
