Baby Potato Masala Gravy (Dum aloo) Recipe

Ingredients:
Baby potatoes - 25-30 count
Onions - 1 big chopped
Tomatoes -3 medium chopped
Ginger garlic paste - 1 tblspn
Red chilli powder -1 tblspn
Turmeric powder - 1/2 tspn
Red chillis - 2
Curry leaves - 4-5
Coriander powder - 1tspn
Cumin powder - 1 tspn
Garam masala powder - 1/2 tspn
Oil - 3 tblspn
Salt - to taste
Water - as needed
Cashew and coconut powder for gravy - 1/2 cup
Directions :
First boil and peel off the potatoes.Heat 1 tblspn oil in a pan and fry the potatoes until it turns light golden color.Next heat oil in a pan and add chopped onions and fry it until it is translucent.Add ginger garlic paste and red chillies then fry it for about 30 seconds.Add tomatoes and mix it very well.Add chilli powder,turmeric powder,coriander powder,cumin powder,garam masala powder and salt in it.Cook them for about 6 to 8 minutes and add some water while cooking.Now add cashew,coconut powder and mix it very well.(You don't need to toast the cashew and coconut)Now add baby potatoes,curry leaves and cook it for about 15 to 20 minutes or until the sauce thickens.Done, garnish with coriander leaves.Enjoy with chapathi or rice.

Cook it until tomatoes fully cooked |
Add some water and cashew, coconut powder and potatoes. |
Add curry leaves and cook it until sauce thickens |
