Amla (Gooseberry) Pickle

Amla (Gooseberry) Pickle:

Ingredients :

Amla - 2 cups (small goose berry)
Toasted Sesame seeds powder - 1 cup
Red chilli powder - 1 cup
Salt - 1/2 cup
Toasted Mustard Powder -1tblspn
Toasted Fenugreek Powder -1tspn
Lemon juice - 2tblspn
For tempering:
Vegtable oil - 1 1/2 cup
Mustard seeds - 1tblspn
Jeera - 1tspn
Red chilli-1
Garlic -2 cloves crushed

Directions:
First take a mixing bowl and add lemon juice,little salt,little chilli powder and mix it very well and put in the refrigerator and wait until 24 hours.
In the next day take a big mixing bowl and add sesame seeds powder,red chilli powder,salt,mustard powder,fenugreek powder and give a good mix.Now add amla mixture into it.
heat oil in a pan and add oil,when oil is heat add mustard seeds,jeera in it,when they are splutter add red chilli and garlic fry them and switch of the flame.When oil is cool add amla mixture and give it a good mix.
Taste the mixture it should be salty.If is less salt add little more salt so,the pickle won't spoil.Transfer to the pickle clean glass jar and store in a room temperature.
Before using the pickle let it stand for 3 to 5 days so the pickle well marinated.
After 1 week store in refrigerate the pickle.Eat with hot rice.
