Veg Hakka Noodles

Vegtable Noodles:
Preparation Time : 15 min
Cooking Time : 20 min
Yield : 3 to 4

Ingredients :

Hakka Noodles - 150 gms 
Cabbage - 1 cup julienned cut
Carrot - 1 medium julienned
Capsicum - 1 small julienned
Onions- 1 small julienned
Celery-2 tblspn chopped
Green onions- 2 tblspn chopped
Soya sauce -1 tblspn
Chilli sauce - 2 tspn
Vinegar - 1 tspn
Ketchup - 1tblspn
Ginger and garlic- 2 tspn finely chopped
Oil - 1 tblspn
Salt - to taste
Chilli flakes - 1tspn
Directions:
First cook the noodles in hot boiling water with little salt and few drops of oil.When they are little cooked then completely drain the water and wash the noodles with cold water and keep a side.
Heat the oil in a pan, add ginger garlic and fry it, add cabbage, carrot,capsicum,onion and fry it for just 1 min.Do not over cook. To make it softy,It should be half cooked. Now add soya sauce,chilli sauce,ketchup,vinegar and salt. Let it cook about 1 to 2 min and add chilli flakes in it,mix it well. Now Add noodles and mix it.
Keep tossing until all vegetables and noodles are mixed well.Now cook the noodles for 1 minute and turnoff the stove.
Garnish with green onions(scallions).
Note : If you want some egg on it just heat oil in pan and add some eggs,salt,pepper powder and cook it like crumbled eggs.Then add the eggs on the top of the veg noodles.It would become Egg & Vegetable Noodles.It is ready to server now, Enjoy.
